The following recipe is ideal for the weekend and at any point in general that you are missing summer. Sardines are super healthy and tasty and this recipe super easy.

The most difficult part of the recipe is cleaning and preparing the fish. If you are not comfortable on that you might as well ask your local fishmonger to do it for you. If you have to do it though those are the steps.

First remove the head with your hands and using your finger make a small opening on the belly from the inside out. All the way down to the tale.

Then slowly and carefully, remove the middle skeleton bone making sure you don’t remove any meat together. Then we go to the more serious stuff..

Ingredients for Sardines with vegetables

  • 1 kilo of sardines
  • 2 green peppers
  • 1 red pepper
  • 30 cherry tomatoes sliced in 2
  • olives
  • 1 onion sliced
  • Salt, Pepper
  • Oregano, Thyme
  • Olive Oil

The process is very simple.

You need to cut the vegetables and place them in the bottom of a deep pan and place them in the oven. First, the onions, then tomatoes and the peppers. Sprinkle with a lot of oregano and thyme as well as salt, pepper and olive oil.

Sardines recipe

Place it in the oven on the 180c for around 45 minutes or until the vegetables get there juices out. (you might add a bit of water)

When its done, remove the pan and add the sardines on top. You should have allready added salt and pepper as well as a good portion of oregano all over them. Sprinkle a lot of olive oil and then add them back in for 30 minutes more.

When you serve it put the vegetables on the one side and the sardines on the other.
