Working and living alone in London i have realized how important it is to prepare something to eat which can be equally simple but tasteful also. Something that you can show off to your friends, but also make it by yourself when you are coming back from work and want something that requires not a lot hassle.

I think the following recipe is exactly that.  It has some elements that i absolutely love.  Firstly, it is very easy to cook and secondly it makes sea bream to look so special. Especially if you add a bit of something when you decorate your dish.

Ingredients

  • 2 Sea bream fillets
  • 2-3 spoons of Capers
  • 500gr of Asparagus
  • 3-4 spoons of Olive oil
  • Juice from 1 lemon
  • Fresh Parsley finely chopped
  • Salt and Pepper as much as you desire

Take a big piece of baking foil and put the Sea bream fillets inside.  Before you do that though, make sure you have sprinkled them with olive oil, the lemon juice and as much as salt and pepper as you wish. Make sure you seal the sea bream and all of its juices inside the baking foil  and put it in the oven on medium to high heat for around 45 minutes. The baking foil, will ensure that the juices from the lemon will remain inside and it wont “burn” even if you forget it a bit in the oven. The fish will remain tender and white..

In the same time in a frying pan, pour a bit of olive oil and in medium heat fry the asparagus. Make sure you roll them from all sides and after 2-3 minutes pour the glass of wine and lower the heat. Keep frying them until they become tender and soft without burning them.

Put the Asparagus on the dish and add the sea bream fillets on top.  Sprinkle them with the capers and parsley. Serve immediately!
