I always remember the times when I was young looking my mother preparing soups for supper..especially during winter….fasolada…lentil soup…..fish soup….and chicken soup.
One of the most stupid thoughts that I had seeing my mother cooking a soup is that it takes so much time. Well, that is not the case. Cooking a chicken soup is a one of the most easiest recipes you can have.
The reason why I say that is because you don’t need to have any extra skills or do two things at the same time…the only thing that takes time is cleaning the vegetables. Other than that is a recipe that it’s really straight forward and depends on you how much you want to change it.
The basic ingredients for me that you need to use are… chicken breast (obviously J ) , rice and lemon ! Other than that you can add as many vegetables as you want or have.
So lets try it !
CHICKEN SOUP RECIPE
- 200-400gr chicken breast
- 1-2 carrots sliced
- 2-4 potatoes cut in cubes
- 1 cup of rice
- 1/2 vegetable cube
- Olive oil
- Salt, pepper
- half lemon juice
Slice thinly the carrots , and the potatoes in cubes. Cut in onion in thin slices.
Fill one big cooking pot with water …around 1 ½ litres but it depends on your pot. Put firstly the potatoes and the carrots and leave them to boil. Add a little bit of olive oil, salt and pepper, also half a vegetable cube if you want.
The important thing is to realise when the potatoes are starting to get softer. Ideally you should leave them to boil for around 40 minutes but that depends on how thinly you have sliced the carrots and cut the potatoes. When you realise they are getting softer add the onions and then the chicken.
Leave it to boil for 10 minutes . Continue with adding the rice and stir everything together.
Remove it from the heat when the rice is ready. Serve it hot and remember to add half a lemon juice.
That’s all! Well, other than that you can add any vegetables you want and make it to your standards. Either way it’s a recipe that its quite easy and you can always say to your friends that you eat healthy food.! …
