    Greek Omelette with Feta and Olives

    You can use a lot of variations to make an omelette but there is always something special when you add feta cheese on it.

    Ill be honest, i do like a lot to make an omelette with sausages or bacon. Its perfect and they are the best to make this snack really filling for you. However, not everyone likes it the same like so you always need to have some variations ready.

    Feta cheese and tomato are really nice cause they freshen up the taste and they are ideal for you during summer. You can add, various herbs also depending on your preferences but in my opinion nothing can beat oregano in this situation.

    I mean, lets be honest, feta cheese can only be mixed with oregano..

    INGREDIENTS FOR GREEK OMELETTE WITH FETA

    • 3 eggs (one person)
    • 2 tbsp of olive oil
    • Pepper
    • 100gr of Greek Feta Cheese
    • Large hand full of -ideally- sliced kalamata olives. Sliced
    • 1-2 tomatoes chopped
    • Lots of oregano

    HOW TO MAKE GREEK OMELETTE

    1. Add some olive and heat the pan to high. Whisk the eggs in a large bowl with a bit of pepper and salt, if you want but bear in mind that feta is salty.
    2. Throw in the eggs and reduce to medium/low after 2 minutes.When they are still half cooked add the tomato, olives and feta and spread them on top
    3. With a flat cooking utensil, flip half of the omelette on top and continue to cook it like a sandwich. Flip it on more time so it wont be burned from one side only.
    4. Serve it by adding more oregano on top and sprinkle a bit more of olive oil

    The following recipe is a standard dish for any time of the day during summer in Greece. Kagianas (Καγιανάς) is an easy to make dish that takes advantage of the tomatoes that are in season.  Add a little bit of feta and you have yourself a meal!

    Tomato burgers or else “Ntomatokeftedes”

    Every now and then i try to create something new just out of fun. Unfortunately this kind of “fun” ends up making the whole kitchen a mess and makes the cleaning after wards even more difficult especially if the food was good enough.

    Since i did the courgette fritters some time ago i always wanted to make something similar and i ended up in the … Tomato burgers :)!!

    Apparently they are really famous in the…already famous island of Santorini where tomatoes can grow easily.

    INGREDIENTS FOR TOMATOBURGERS

    • 4-6 mature tomatoes
    • 400gr of feta cheese
    • A bunch of parsley and one of mint
    • 1 big red onion
    • Salt and Pepper
    • Chilli peppers
    • Olive oil
    • A cup of self raising flour

    How you cook ntomatokeftedes

    Ideally you need to have a mixer as this will save you from a lot of pain trimming everything by hand. If you have….then start by slicing the tomatoes and getting the juice out. Place them in a big bowl

    Continue by doing the same for the Feta cheese, parsley, mint, onion and the red chilli pepper. When you finish add them in different bowls

    Now the difficult part starts….Use your hands and start mixing them all in a big bowl until they become really thick. Make sure that you add all the other ingredients but you may need to play around with the quantities of flower and the tomato juice depending on what the mixture needs to become thicker. Make sure you add olive oil, Salt and pepper. When its done leave it in the fridge for 10-20 minutes.

    The most difficult think is to make the mixture thick so you can fry it afterwards. That’s why its better to start with few tomato juice and then add slowly making sure that the mixture will be thick enough so it doesn’t looses its texture while you fry it. Mothers advice.. use toasted bread to make the mixture thicker!

    Pasta with Feta-Tomato and Capers

    Having pasta is not something of my speciality but I try to have one every now and then as they are really easy to make.  Despite that I never had the chance to have pasta that I would really enjoy to make it to the blog.

    Well, the last time I tried to cook pasta I tried the following way which was much better than I expected. As one friend told me, pasta is nice cause you can add what you want and it still work.

    I like past -as most of us I guess- as it is really easy to cook and fills your stomach when you are hungry. So here is a recipe I did with pasta and which I think can be really nice during summer. The important thing with that is that you can make it with really basic ingredients.

    Forgive me my Italians friends, I know that its not a proper Italian pasta recipe…but I did my best  in mixing Italian and Greek flavours

    Ingredients for pasta with tomato and capers

    • Pasta, your choice
    • 2 spoons of capers
    • 20 tomato cherrys cut in half
    • 2 fresh onions finely chopped
    • 300 grs of feta cheese
    • Olive oil, Salt Pepper

    How to make it

    Make the Paste, the normal way as you do.  Drain them and leave them aside

    Place the pasta on deep bowl and add all the ingredients including the feta and the cherry tomatoes. Make sure you mix them quite well.

    Serve by sprinkling a bit more of olive oil on top and a bit of olive oil

    Its Ready!

    Mussels with tomato sauce

    You know before I started cooking I always thought that some recipes are so unbelievable difficult to make. I always thought that my mother was a hero for cooking so many different dishes that looked to my eyes so complicated.

    Well, don’t get me wrong , I still consider my mother a hero for managing to upbringing me despite all the things I did to her me and my brother. Nevertheless, when you start cooking you realize that some of those complicated dishes aren’t so complicated as you thought.

    Let’s take for example mussels with rice and red sauce.  Most of us when we think about mussels, then the first think that comes to our mind is a really expensive dish that we can only eat in really posh restaurants. Weeeeeeell…not really…

    First I have to say that mussels are something common in taverns on the islands of Greece and you can find some really nice variations of the dish.  My mother used to make some recipes with mussels just before the orthodox Easter where typical most of the orthodox fast for around 7 to 40 days (depending on how much you really believe…)

    So just days ago when I saw a pack of mussels in Sainsbury super markets near my house in London, I decided to try them.

    What did I do? I checked online, saw some recipes …and of course I called my all-knowing mother for the last tips.

    In this case I have to say that always when I call my mother for advices I always here the screams of my father on the background depending on whether he agrees or not about what my mother is saying.

    “no don’t do the mussels with red sauce…do them just with lemon” …or….”tell him that he can cook them with pasta also not rice…” anyway…

    Its ready! Serve with rice or spaghetti.

    If you find out that you bought too many mussels and they don’t fit in the pot …don’t worry. Put a little bit of lemon on each one and eat them as they are. Its one of the best things you can taste.
