    Greek Omelette with Feta and Olives

    You can use a lot of variations to make an omelette but there is always something special when you add feta cheese on it.

    Ill be honest, i do like a lot to make an omelette with sausages or bacon. Its perfect and they are the best to make this snack really filling for you. However, not everyone likes it the same like so you always need to have some variations ready.

    Feta cheese and tomato are really nice cause they freshen up the taste and they are ideal for you during summer. You can add, various herbs also depending on your preferences but in my opinion nothing can beat oregano in this situation.

    I mean, lets be honest, feta cheese can only be mixed with oregano..

    INGREDIENTS FOR GREEK OMELETTE WITH FETA

    • 3 eggs (one person)
    • 2 tbsp of olive oil
    • Pepper
    • 100gr of Greek Feta Cheese
    • Large hand full of -ideally- sliced kalamata olives. Sliced
    • 1-2 tomatoes chopped
    • Lots of oregano

    HOW TO MAKE GREEK OMELETTE

    1. Add some olive and heat the pan to high. Whisk the eggs in a large bowl with a bit of pepper and salt, if you want but bear in mind that feta is salty.
    2. Throw in the eggs and reduce to medium/low after 2 minutes.When they are still half cooked add the tomato, olives and feta and spread them on top
    3. With a flat cooking utensil, flip half of the omelette on top and continue to cook it like a sandwich. Flip it on more time so it wont be burned from one side only.
    4. Serve it by adding more oregano on top and sprinkle a bit more of olive oil

    Aubergines must be my favourite summer vegetable. Many times when i try to think of different dishes to cook with aubergines i get lost from the various combinations you might have.

    In this case i got the ideam from the famous imam baildi and i tried to spice it up a bit with some more ingredients. Eggplants, or aubergines or whatever you want to name them are in the heart of Mediterenean cuisine and you can get a variety of similar dishes if you are at some point in Greece.

    As my father used to say it is important to manage and boil it properly and keeping the full texture of the vegetable. In the same time though the aubergine needs to melt in your mouth rather than having to chew it.

    Difficult? Well, that’s life!

    INGREDIENTS FOR AUBERGINE STEW WITH OLIVES AND CAPERS

    • 6 large aubergines
    • 2 medium onions sliced
    • 2 cloves of garlic
    • Around 20-30 olives without the stone
    • 20 cherry tomatoes cut in the middle
    • 1 glass of red wine
    • 1 tomato can juice
    • Oregano and Parsley
    • 300gr of Greek Yoghurt
    • Olive oil
    • Salt and Pepper

    METHOD

    • In cutting board start putting your aubergines and cut them in cubes with sharp knife.
    • In a deep pot add some olive onion and the onion and the garlic until it becomes brownish. Make sure you stir them all the time so they don’t get burned.
    • Add the olives, and the capers together with the tomato juice. Continue to stir them for couple of minutes.
    • Next, add the aubergines and leave them for couple of minutes. Pour the wine and let it for a minute more. Throw in the tomatoes , salt and peeper and lower the hit.
    • Keep boiling it for 25-30 minutes until they aubergines are done with out loosing there texture as we said before.
    • Just a bit before the end, add the oregano.
    • Serve in a deep plate by adding a big spoon of Greek style Yogurt on top

    Easy to Make Chicken with Black and Green Olives Recipe

    That is an easy way to start 2019. Cooking some chicken was never difficult and always gave you a number of options.

    You can either make it straight in the oven, grill or use it on a variety of ways like they do in Eastern cuisine.

    Mixing up though some Greek ingredients on it like olives can make quite special though. Below is a recipe that hopefully you will find easy to cook and also really tasty as i did.

    INGREDIENTS FOR CHICKEN WITH BLACK AND GREEN OLIVES

    • 4 chicken breasts
    • 3 peppers sliced, 2 reds and 1 green
    • 1 big onion
    • 1 clove of garlic
    • 2 bay leaves
    • Oregano, Paprika
    • Olive oil, salt and pepper.
    • 2 big tomatoes trimmed.
    • 1 spoon of butter
    • Black and Green Olives with stone. Around a small cup.

    How to cook it

    • Wash and cut the peppers in slices as well as the onions and garlic
    • In a big deep pan, add some olive oil as well as the butter and bring it in medium to high heat. Add the chicken and cook it from all sides until it becomes red-brown. Remove it and put it aside.
    • In the same pan, add some more olive oil and the peppers, onions as well as the garlic. Finally add the chopped tomatoes.
    • Add again the chicken, as well as salt, pepper, paprika and the bay leaves and let it boil for some 10-15 minutes making sure the chicken is well cooked.
    • Just before the end add the olives making sure they boil for some 5-10 minutes more.
