Lentil Salad with mustard sauce
Making a salad is never something that excited me a lot. Up until couple of years ago i always thought that salads should only be used as a part of a full meal rather than the main course.
All those things changed slowly and i have included a variety of salads to my diet. One of those that i do regurarly is the following which i am really proud of.
You see not only its quite healthy but the sauce has two of favourite ingredients. Mustard and Balsamic!
Ingredients: Lentil Salad with Mustard Sauce
- 1 cup of Lentils
- 1 red onion finely cut
- 1 small bunch of parsley
- 2 cloved of garlic
- 1 green pepper sliced
- 2 teaspoons of olive oil
- 3 teaspoons of balsamic
- 2 small spoons of dijon or wholegrain mustard
Nothing too fancy about it. Try to boil the lentils really good and drain them when they are ready.
In a bowl make the sauce and mix everything together. Leave them in the fridge for 30 mins and its ready to serve.
