Salmon with lentils is not something that is uncommon. However, adding spinach and wholegrain mustard gives a bit of an edge in my opinion.
During the pandemic i managed to cook -like many others i guess- all the recipes that i could. It was for certain that sometimes i would have to experiment with new things. Spinach and lentils mixed with salmon was something that i have heard before but what about adding some mustard?
Having a bad night where everything goes wrong is not good for you. You are waiting Friday night to finish work and go out and enjoy yourself, go to the festival you booked tickets months ago and party hard, just to find that it is cancelled due to overcrowding.
Yeah, its not good. The only thing that is left for you is going back home and think about a night that could have gone so well but it didn’t. What to do next day? Well, option number 1 is to sit there and do nothing or you can choose option 2 and get over it with cooking something really nice that it will make you forget it.
I choose number two.

Ok to be honest you have many more options on what to do the following day in such a situation, but i had to start the article in some way.. 🙂
After some extensive research i managed to find the following way to cook a salmon fillet i had on the fridge…and forget the unfortunate cancellation of the previous day.
Simple stuff always help.
Take your thick, salmon fillet and add salt and pepper from both sides. Put it in a nice baking tray add a bit of water and olive oil and  place it on a tray, place it on the oven and start cooking it on high heat .  In the same time in glass, add mustard, olive oil,  salt and pepper. While your  salmon is beeing cooked  pour the sauce on top and change sides.
After 30-40 minutes it should be ready. Â Take the glass with your sauce, add some dill and stir it well. Â Pour it again on top and serve with salad if you want.
As I have said my cooking was based on the idea to do things that are nice to taste but also really quick to cook and without a lot of trouble. On this thought is based and the following recipe that I think I learned from somewhere else online. Ok, its not really Greek recipe ..but its something that I do all the time..
Always, when I was looking the salmon fillets in the super market I was wondering about any possible ways that you could cook them. Oven, looked as the best option at the time and indeed it was. After some quick discussion with my mother ( 30-40 minutes on the phone …) and some online research I did went for the following…
INGREDIENTS
2 Salmon fillets
1 red onion chopped
A bunch of fresh dill chopped
3-4 Spoons of Balsamic Vinegar
METHOD
Dead Simple, slice the onions, add them on top together with the salt and pepper. Add olive oil and the balsamic vinegar. Put it on the oven for 40 mins in high heat. Serve it with some extra dill on top.
If you have green or red peppers .. (or both) you can add some slices on top.
