Grilled Pork Souvlakia with oven potatoes
Everyone knows by now how beloved is souvlakia in Greece and how often it is consumed everywhere. In Athens, in Thessaloniki, on the islands, on the small villages…it doesn’t matter. You will hear it sometimes with different names in Greece but always with same style.
One Saturday morning after an excessive alcohol abuse on Friday night, I was so much wishing I could order some to my house like the ones they have in Greece. Didn’t want any pizza, or burger…just a good souvlakia dish. Well, there were some initial problems, first the hangover from last night’s rum and coca cola, and the fact I didn’t had any yogurt or pita bread to try and cook one with the more traditional recipe.It doesn’t matter; you still can make something nice…as long as you manage to control your hangover.
INGREDIENTS FOR PORK SOUVLAKIA WITH OVEN POTATOES
- 500gr of pork chopped in medium size cubes
- 4-6 skewers’… or anything close to that you can find so you can stick the food, i had to improvise…
- Around 10-15 cherry tomatoes
- 2-3 large potatoes cut in different sizes
- 2 onions chopped in large wedges
- 2 green peppers chopped in large wedges again
- Olive Oil
- Salt and pepper
- Oregano, much of oregano
METHOD
- Drink a large glass of water to relieve the pain from the headache and then take some painkillers Then we are going to start preparing the potatoes, I found a really nice way for good oven potatoes. Take a big pot and fill it with water, put the potatoes in, bring it to a boil and let them boil for 15 minutes until you see the potatoes are soft you can pinch them with a fork
- When its done, remove the water and keep the potatoes (obviously..) . Add them in to a baking pan and sprinkle with salt and oregano, adding also olive oil so the potatoes are not stuck. Put them into the oven for 200c for 20-25 minutes until you see they start to become brown on the outside.
- As the potatoes are being cooked you take the ingredients and start preparing the souvlakia. As a basic rule, start with a vegetable, and end with a vegetable. Don’t cut the cherry tomatoes in two, as it will remove the juices from them. Put lot of salt, pepper, oregano and oil on them before you start placing them on the skewers.
- When you are finished, add them on the grill and cook them for 15 more minutes turning them every 4-5 minutes from each side. You can keep the potatoes underneath so to keep warm.
Serve them with a bit of parsley if you want, and some sauce of your choice.

Potato salad with mustard
Years ago I remember when I was working in a beer restaurant in Athens where we served all kind of food –but mainly german- where I was obsessed with the potato salad of the chef. It was so filling and tasty that I could eat just that for days.
Sometimes I try different kind of salads that can be accompanied with my food and even if the typical greek salad is my favourite, it is good to mix it sometimes. Don’t know the history behind it but I don’t think the Greeks have the copyrights of the potato salad even if it is widely used also.
So I decided to make my own first attempt in a potato salad and i have to say I was quite proud of it.
POTATOSALAD WITH MUSTARD
INGREDIENTS
- 5-6 potatoes
- 1 onion
- ½ bunch of parsley
- ½ cup of oil
- A small teaspoon of English mustard
- Salt and pepper
METHOD
Boil the potatoes peel them and cut them into cubes.
Put them in a big deep plate and add the onion the bunch of parsley ½ cup of oil , salt and pepper Stir them for a while with a spoon and then add the English mustard.
Continue to stir until all the ingredient go around. Be careful not to over do it and make mash potatoes instead. Ideally you should be able to see the potatoes and not be melted.
Serve them with any kind of meat or as a starter maybe(? ) . The spicy flavour of the mustard is unique together with the potatoes.

Sea Bass with lemon and potatoes
[dropcap]W[/dropcap]ell, I always would like to see that here in England we enjoy summer every year with lots of clear nice sunny days but everyone would know how much I would be lying. Unfortunately sun wasn’t good on our side in the last few weeks in London but the moment that changed, we remembered how summer should be.
In Greece summer is always combined with good fish. On the last time I was in the local market I got large sea bass to cook. I have to say that having a big sea bass its not an easy task to cook but its sure worthwhile.
Well, so how do you do it? Hmmm… I guess there are different ways but usually I love putting the fish in a foil and baking paper to cook it. It makes the fish cooked really nicely and keeps all the flavours and taste.
The following is a simple recipe I think that anyone can do and cook a nice fish without a lot of trouble as the only thing he needs to do is …leave it on the oven!
OVEN BAKED SEA BASS WITH LEMON
- 1 sea bass
- 1 onion chopped
- 2 cloves of garlic
- 1 bunch of parsley
- 2 teaspoons of olive oil
- 2 lemons
- 1 baking foil
- salt and pepper
Take the sea bass and wash it and clean it properly. Put as much salt and pepper you would like inside and outside the fish.
In a big bowl add the onions, garlic cloves as well as the olive oil and the lemon juice. Create mixture that you pour on top of your fish and let it soak in it.
Cover the fish with the baking foil and cook it in the oven for around 30-40 minutes on 180c. Times always vary depending the oven.
For the potatoes
- Cut the potatoes in small pieces and place them in a baking pan
- Mix in a glass the juice from the second lemon that has remained together with olive oil a teaspoon of mustard, oregano and water. Stir them really good and spread the sauce on all the potatoes and mix them using your hands
- Place them on the oven.
Ideally you should place them on the same time and time it correctly. Usually it takes 30 minutes for the potatoes –if they are cut on small pieces
Add the parsley on the end when you serve it.

Fast Recipe: Chicken with potatoes
Well, anyone wants to make a reaaaaally good impression on a first date, and you know what they say… love must to pass first from the stomach. So lets imagine the following situation…you promised your loved one food… and he or she is coming in 45 mins to 1 hour ….Aw…how unlucky…you don’t have anything in the fridge… You need something fast that will leave you time to do other things in the mean time… shower…clean up the mess in the house… etc etc..
Ok lets get down to business!

INGREDIENTS
400grs of Chicken (any part you like)
2-3 big potatoes cut in various sizes
1 glass of olive oil
1 spoon of mustard
Salt and Pepper
METHOD
Easy Peasy.
In a big oven tray. Add the chicken and the potatoes. In a glass, add the olive oil, the mustard, salt and pepper and stir well. Pour the mix all the ingredients.
Heat up the oven and cook it for around 45-1 hour in high heat.
Open up a beer!
