Having a bad night where everything goes wrong is not good for you. You are waiting Friday night to finish work and go out and enjoy yourself, go to the festival you booked tickets months ago and party hard, just to find that it is cancelled due to overcrowding.

Yeah, its not good. The only thing that is left for you is going back home and think about a night that could have gone so well but it didn’t. What to do next day? Well, option number 1 is to sit there and do nothing or you can choose option 2 and get over it with cooking something really nice that it will make you forget it.

I choose number two.

Ok to be honest you have many more options on what to do the following day in such a situation, but i had to start the article in some way.. :)

After some extensive research i managed to find the following way to cook a salmon fillet i had on the fridge…and forget the unfortunate cancellation of the previous day.

OVEN BAKED SALMON WITH MUSTARD SAUCE

Ingredients

  • A big fillet of Salmon. Depends how much hungry you are!
  • 3-4 lemons
  • 1 onion chopped
  • 2-3 teaspoons of Dijon Mustard
  • Oregano
  • Salt and Pepper
  • Thyme
  • Baking paper

Method

Step 1

Take the baking paper and lay it on baking pan Make 4-5 slices from one lemon and then lay them down Add on top the onions and sprinkle some oregano.

Step 2

Ideally you can add more Spices if you want, (parsley, mint etc) When its being cooked it will leave the flavours on the salmon. On top of the lemons we add our Salmons. Sprinkle a little bit of Salt and pepper.

Step 3

In a big glass we put the juice from 2-3 lemons (depending on our taste) and add 3 teaspoons of Dijon mustard, 1 teaspoon oregano and…well 1-2 teaspoons of Thyme. (I think I put to be honest but who is counting J ) Mix them really good with a spoon and then add them all over your salmons. Make sure to pour it all over it so it covers all of the salmon.

Step 4

Put it in the oven and let it cook for…30-40 minutes in medium to high heat. When then salmon becomes a little bit more brown on the outside, it is certainly ready.

I learned how to cook cause...i didn't have much of choice. The following recipes are the results of my efforts!
