As I was coming back home one Thursday evening I was thinking that I had to get some food to eat as our fridge was pretty empty…as always. So I went to straight to a local 24 hour shop we have in Anglel, London.
When I was getting the things I specifically thought to get some lentils so I can make a salad I had in mind. So after I got all the things I need –including some really important can of beers- I headed home. However, there I only discovered that we already had 3 packages of lentils all ready…so one package more to the selves… oh well, I had the excuse now to make the salad I found in one Greek site.
So let’s get down to business.
- 1 cup of lentils
- 1 red onion chopped in large pieces
- 1 carrot thinly chopped
- 7-10 small white mushrooms sliced
- 2 tomatoes chopped in small cubes
- Chopped parsley
- 1 cucumber sliced
Firstly we boil the lentils in a big bowl. Ideally we firstly boil the lentils and when they start to boil we change the water and put completely new in the bowl. That will help remove the initial black color from the lentils.
After we boil them for 20 mins we remove them from the heat and put the lentils on the plates. We add the vegetables and all the other ingredients and we mix. Add as much salt as we want.
For the Dressing. We add all the ingredients together in a glass and we stir them. Always in those kind of dressings taste in order to be sure that you like what you made…if not adjust properly.
When we have the dressing ready we mix it to our salad and we stir. Before we serve it we put the salad on the fridge for 15-20 minutes. The salad is served cold and it is ideal for the hot summer days.
